How it works
Chef Bakrin Ahn’s Millennial Dining in Seocho has served vegan Korean classics since 2020, and its spin-off Millennial Flavor Town bottles that kitchen R&D into a five-step patented fermentation: soybeans, mushrooms, red beet powder, rice koji, and oils ferment into a high-protein, cholesterol-free base. Shredded beef goes into ready-to-eat jars in soy-sauce and truffle flavours, while the Millennial Marbles whole cut fakes Wagyu-style marbling with beet powder and coconut oil, finished with charcoal-grill aroma to win over meat-eaters.
Pain points
Rubbery, beany, or mushy textures that turn first-time buyers into never-again buyers; Korean vegan kitchens importing their premium analogues; and a category where every failed tasting poisons the whole shelf.
